Actually there's no effective way of telling which sawhorse is sturdier, they're both holding the same weight and we have no idea how they're made, or what they're made of.

In the past, disassembly and assembly of sawhorses were somewhat involved. The legs were usually attached to the horizontal beam by means of bolts, screws, nails or clamps. This type of mounting was necessary to provide secure attachment of the legs to the cross beam and prevent the sawhorse from falling apart when moved or used.
